These little breakfast cups are a fantastic healthy meal prep item for the week. These flourless banana oatmeal cups are made with simple ingredients and taste incredible!

Flax and Chia seeds

Most of these ingredients may already be in your pantry to whip these up in under 40 minutes. If you don’t have chia seeds at home, grab yourself a bag! These are great for so many recipes, including in smoothies or on a salad! I love them in these cups because you get a little extra crunch from them!😀 Chia seeds are packed with calcium, protein, magnesium, and omega-3s! So much healthy goodness for you in those seeds.

Flax seeds are also so good for you, and you can sneak these in just about anything! I even add them to my kids pancakes and they have no clue! If these aren’t something you are used to eating, give them a try. These also have so many health benefits, the recommended healthy serving per day is only 1-2 tablespoons. Flax seeds are also high in omega-3 fatty acids, which make them heart healthy! They also help to lower cholesterol, lower blood pressure, may help lower blood sugar levels.

Both of these seeds always get sprinkled on my oatmeal every morning. So, when I decided to branch out and make some breakfast oatmeal cups, I had to add them! Give the flourless banana oatmeal cups a try!

Flourless Banana Oatmeal Cups

One healthy chic
These yummy little breakfast (or snack) cups come together in a jiffy! No flour needed for these, just old-fashioned rolled oats, banana, and a bunch of yummy ingredients create these little bits of heaven! Yum!

Ingredients
  

  • 2 1/4 C old-fashioned rolled oats
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 C chia seeds
  • 1/4 C ground flax seed
  • 1/4 C mini chocolate chips
  • 2 large bananas mashed
  • 3/4 C milk
  • 1/4 C honey
  • 1 egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees. Spray muffin pan(s) with non-stick pray or use cupcake liners.
  • In a large mixing bowl, mix the oats, baking powder, cinnamon, salt flax and chia seeds.
  • In a separate bowl, whisk the mashed banana, milk, honey, egg and vanilla extract together. Add the dry ingredients to the wet ingredient bowl and mix until well combined.
  • Lastly, add the chocolate chips and mix well.
  • Evenly, spoon the mixture into the muffin tray- about 12-15 cups.
  • Bake at 350 for 20-25 minutes.
  • When done, allow time to cool in muffin tray (about 10 min) before transferring to wire rack to cool completely.

Notes

Makes approximately 15 muffins. Enjoy!
